All tea comes from the same plant, the Camellia Sinensis. Herbal teas are not really teas as they are not made from the Camellia Sinensis, they are usually referred to as Tisanes or Herbals. The colour of the tea is defined by the level of oxidisation.
White tea has the lowest level of oxidisation. Because white teas tend to be the new buds on the plant where the energy has been directed by the plant, they seem to be the highest in antioxidants.
White teas produce a very mild and delicate flavour and aroma and a very pale green or sometimes yellow liquor.
