The next level of oxidisation produces the green teas. Green teas are typically pan fired (eg Dragonwell) or steamed (eg Sencha) producing a variety of flavours ranging from sweet, nutty, grassy and astringent.

The liquor from green tea ranges from yellow to bright green.
