Great tea is all about timing and temperature. Too hot and the water will scald the tender leaves of the white teas, too cold and you won’t get the best from your herbals.

Timing is important because unless you like that strong astringency that green teas get when they are over-brewed, you’d better take those leaves out at the three minute mark.

Good water also plays a part in the equation. Spring water or filter water will give your tea the edge.
